Pork "Tacos"

Lime-Cilantro Slaw

Ingredients

  • 2 Tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp honey
  • 1 lb pork tenderloin
  • ½ tsp salt
  • ½ tsp pepper
  • 8 large romaine leaves, cut in half crosswise
  • Lime-Cilantro Slaw

Instructions

  1. Preheat oven to 400°F.
  2. Combine 1 Tbsp oil, garlic, chili powder and honey; rub mixture all over pork. Sprinkle with salt and pepper.
  3. Brown pork on all sides in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 5 minutes.
  4. Transfer to oven. Bake 15 minutes or until a thermometer registers 145°F.
  5. Let pork stand 10 minutes; thinly slice.
  6. For each "taco," stack 2 pieces of lettuce on a flat work surface.
  7. Fill lettuce with sliced pork and Lime Cilantro Slaw.
  8. Fold up to serve like a taco.

Side Dish Ingredients

  • 1 (10-oz) pkg coleslaw mix
  • ⅓ cup chopped fresh cilantro
  • 1 tsp lime zest
  • 2 Tbsp fresh lime juice
  • ¼ cup extra virgin olive oil
  • 2 Tbsp honey

Side Dish Instructions

  1. Combine slaw and cilantro in a bowl.
  2. Whisk together lime zest, lime juice, oil and honey; drizzle over slaw.
  3. Toss and season with salt and pepper to taste.
