Pork "Tacos"
Lime-Cilantro Slaw
Ingredients
- 2 Tbsp olive oil, divided
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp honey
- 1 lb pork tenderloin
- ½ tsp salt
- ½ tsp pepper
- 8 large romaine leaves, cut in half crosswise
- Lime-Cilantro Slaw
Instructions
- Preheat oven to 400°F.
- Combine 1 Tbsp oil, garlic, chili powder and honey; rub mixture all over pork. Sprinkle with salt and pepper.
- Brown pork on all sides in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 5 minutes.
- Transfer to oven. Bake 15 minutes or until a thermometer registers 145°F.
- Let pork stand 10 minutes; thinly slice.
- For each "taco," stack 2 pieces of lettuce on a flat work surface.
- Fill lettuce with sliced pork and Lime Cilantro Slaw.
- Fold up to serve like a taco.
Side Dish Ingredients
- 1 (10-oz) pkg coleslaw mix
- ⅓ cup chopped fresh cilantro
- 1 tsp lime zest
- 2 Tbsp fresh lime juice
- ¼ cup extra virgin olive oil
- 2 Tbsp honey
Side Dish Instructions
- Combine slaw and cilantro in a bowl.
- Whisk together lime zest, lime juice, oil and honey; drizzle over slaw.
- Toss and season with salt and pepper to taste.
