Baked Pasta with Turkey and Kale

Ingredients

  • 1 (16-oz) pkg medium pasta shells
  • 1½ lb ground turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 bunch kale, ribs removed and thinly sliced
  • ½ cup water
  • 2 (24-oz) cans pasta sauce
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Cook pasta according to package directions; drain.
  2. Meanwhile, cook turkey, onion, and garlic in hot oil in a large nonstick skillet over medium heat until turkey is browned and crumbly. Gradually add kale, stirring until kale is wilted.
  3. Add water; cover and cook 10 minutes or until kale is tender. Uncover and stir in pasta sauce; bring to a boil, reduce heat, and simmer 5 minutes.
  4. Stir together pasta and turkey mixture in a lightly greased 13- x 9-inch baking dish. Sprinkle with cheese. Bake 20 minutes.
