Sweet and Spicy Chicken

Steamed Garlic Rice and Broccoli

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp butter, melted
  • 2 cloves garlic, minced
  • ¾ cup packed brown sugar
  • ¼ cup water
  • 2 Tbsp Sriracha hot sauce
  • 2 Tbsp apple cider vinegar

Instructions

  1. Pound chicken to an even thickness in a zip-top bag using the heel of your hand or a meat mallet. Season chicken with salt and pepper.
  2. Cook chicken in melted butter in a large nonstick skillet over medium heat 3 to 4 minutes per side or until browned. Remove from skillet, and set aside.
  3. Add garlic to skillet; cook, stirring, 30 seconds.
  4. Stir in brown sugar, water, Sriracha, and vinegar; bring to a boil, reduce heat, and simmer 5 minutes. Return chicken to skillet; cook 2 minutes, stirring to coat with sauce.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil
  • 2 (12-oz) pkg frozen broccoli florets

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook garlic in hot oil in a small skillet over medium heat 1 minute. Stir into hot rice. Season with salt and pepper to taste.
  3. Steam broccoli according to package directions; season with salt and pepper to taste.
