Sweet and Spicy Chicken
Steamed Garlic Rice and Broccoli
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp butter, melted
- 2 cloves garlic, minced
- ¾ cup packed brown sugar
- ¼ cup water
- 2 Tbsp Sriracha hot sauce
- 2 Tbsp apple cider vinegar
Instructions
- Pound chicken to an even thickness in a zip-top bag using the heel of your hand or a meat mallet. Season chicken with salt and pepper.
- Cook chicken in melted butter in a large nonstick skillet over medium heat 3 to 4 minutes per side or until browned. Remove from skillet, and set aside.
- Add garlic to skillet; cook, stirring, 30 seconds.
- Stir in brown sugar, water, Sriracha, and vinegar; bring to a boil, reduce heat, and simmer 5 minutes. Return chicken to skillet; cook 2 minutes, stirring to coat with sauce.
Side Dish Ingredients
- 2 cups long-grain white rice
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 2 (12-oz) pkg frozen broccoli florets
Side Dish Instructions
- Cook rice according to package directions.
- Cook garlic in hot oil in a small skillet over medium heat 1 minute. Stir into hot rice. Season with salt and pepper to taste.
- Steam broccoli according to package directions; season with salt and pepper to taste.
