Sausage, Zucchini, and Bean Soup
Garlic-Herb French Bread
Ingredients
- 1 lb ground Italian turkey sausage
- 2 Tbsp olive oil
- 2 zucchini, cut into half-moons
- 2 yellow squash, cut into half-moons
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 (14.5-oz) cans diced tomatoes with Italian seasonings
- 1 (32-oz) carton chicken broth
- 1 (15-oz) can cannellini beans, drained and rinsed
- 1 tsp dried thyme
Instructions
- Cook sausage in hot oil in a large Dutch oven over medium-high heat until browned and crumbly. Add zucchini, squash, onion, and garlic; cook 10 minutes or until tender.
- Add tomatoes, broth, beans, and thyme; bring to a boil, reduce heat, and simmer 20 minutes.
Side Dish Ingredients
- 2 cloves garlic, halved
- 1 (16-oz) loaf French bread, sliced
- 3 Tbsp olive oil
- 2 tsp dried crushed rosemary
Side Dish Instructions
- Preheat broiler. Rub cut sides of garlic over bread; brush with oil, and sprinkle with rosemary and salt and pepper to taste.
- Broil 1 to 2 minutes or until toasted.
