Brown Sugar-Baked Chicken
Steamed Rice and Buttery PeasIngredients
- ¾ lb boneless, skinless chicken breasts, halved crosswise
- ¼ cup packed brown sugar
- 2 Tbsp butter, melted
- 1½ Tbsp ketchup
- 1 Tbsp Dijon mustard
- ½ Tbsp Worcestershire sauce
- ⅛ tsp crushed red pepper
Instructions
- Preheat oven to 300°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
- Place chicken in a lightly greased baking dish; season with salt and pepper.
- Stir together brown sugar and remaining ingredients; pour over chicken. Cover and bake 30 minutes. Uncover and bake 10 minutes longer or until chicken is done.
Side Dish Ingredients
- ¾ cup long-grain white rice
- ½ (12-oz) pkg frozen peas
- 1 Tbsp butter, softened
Side Dish Instructions
- Cook rice according to package directions.
- Cook peas according to package directions; add butter, and season with salt and pepper to taste.
