Brown Sugar-Baked Chicken

Steamed Rice and Buttery Peas

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved crosswise
  • ¼ cup packed brown sugar
  • 2 Tbsp butter, melted
  • 1½ Tbsp ketchup
  • 1 Tbsp Dijon mustard
  • ½ Tbsp Worcestershire sauce
  • ⅛ tsp crushed red pepper

Instructions

  1. Preheat oven to 300°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Place chicken in a lightly greased baking dish; season with salt and pepper.
  3. Stir together brown sugar and remaining ingredients; pour over chicken. Cover and bake 30 minutes. Uncover and bake 10 minutes longer or until chicken is done.

Side Dish Ingredients

  • ¾ cup long-grain white rice
  • ½ (12-oz) pkg frozen peas
  • 1 Tbsp butter, softened

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook peas according to package directions; add butter, and season with salt and pepper to taste.
