Ginger Chicken and Veggie Stir-Fry
Cauliflower "Rice" with Cilantro and Pumpkin Seeds
Ingredients
- ½ lb boneless, skinless chicken breasts, cut into chunks
- ¼ cup thinly sliced red onion
- 1 Tbsp minced garlic
- 1 Tbsp olive oil, divided
- 2 cups broccoli florets
- ⅓ cup matchstick-cut carrots
- ⅓ cup thinly sliced red bell pepper
- 1 tsp refrigerated ginger paste
Instructions
- Sprinkle chicken with lightly with salt and pepper. Cook chicken, onion, and garlic in ½ Tbsp hot oil in a large skillet over medium-high heat 3 to 4 minutes or until chicken is done. Remove from skillet; keep warm.
- Cook broccoli, carrots, bell pepper, and ginger in ½ Tbsp hot oil in skillet 4 to 5 minutes or until tender. Stir in chicken mixture. Season with salt and pepper to taste.
- Serve over Cauliflower "Rice" with Cilantro and Pumpkin Seeds recipe.
Side Dish Ingredients
- 1½ cups cauliflower crumbles
- Pinch of salt
- 1 tsp olive oil
- 1½ Tbsp chicken broth
- 1½ Tbsp fresh cilantro leaves
- 2 tsp fresh lemon juice
- 1 Tbsp roasted, salted pepitas (pumpkin seeds)
Side Dish Instructions
- Cook cauliflower and salt in hot oil in a large skillet 1 minute, stirring constantly. Add broth; cook 6 minutes or until cauliflower is tender. Remove from skillet. Stir in cilantro, lemon juice, and pumpkin seeds.
