Green Coconut Chicken Curry
Steamed Rice
Ingredients
- 2 lb boneless, skinless chicken breasts
- 3 carrots, sliced
- 2 shallots, thinly sliced
- 2 Tbsp minced ginger
- 1 tsp curry powder
- 2 Tbsp olive oil
- 1 (13.66-oz) can unsweetened coconut milk
- 3 Tbsp green curry paste
- 2 zucchini, cut into half-moons
- 2 Tbsp fresh lime juice
- ¼ cup chopped fresh cilantro
- 2 Tbsp chopped fresh basil
Instructions
- Cut chicken into bite-size pieces; season lightly with salt and pepper. Cook chicken, carrots, shallots, ginger, and curry powder in hot oil in a large, deep skillet over medium heat until chicken is done.
- Stir in coconut milk, curry paste, and zucchini; bring to a boil, reduce heat, and simmer 10 minutes or until zucchini is tender. Stir in lime juice, cilantro, and basil. Serve over rice.
