Ginger Pork Noodle Bowls

Ingredients

  • 2 (12-oz) pkg chopped Asian sesame salad kits (such as Eat Smart)
  • 1½ Tbsp refrigerated ginger paste
  • 2 Tbsp fresh lime juice
  • 4 Tbsp sesame oil, divided
  • 2 lb pork tenderloin, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • ½ (8-oz) pkg wide rice noodles
  • ¼ cup chopped fresh basil

Instructions

  1. Whisk together dressing packets from salad kits, ginger paste, lime juice, and 2 Tbsp sesame oil.
  2. Cook pork, in batches, in 2 Tbsp hot oil in a nonstick skillet or wok over medium-high heat 3 minutes or until browned and done. Remove from skillet, and keep warm.
  3. Add red pepper to skillet; cook 2 to 3 minutes or until crisp-tender. Add dressing mixture; cook 1 to 2 minutes or until sauce is thickened.
  4. Meanwhile, cook noodles according to package directions.
  5. Stir together pork, pepper mixture, and all remaining ingredients from salad kit except wontons. Divide among 6 bowls; sprinkle each with basil and wontons.
