Barbecue-Ranch Chicken Salad
Ingredients
- 10 slices bacon, chopped
- 1½ lb boneless, skinless chicken breasts
- 1 (3-count) pkg romaine lettuce hearts, chopped
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can corn, drained
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 tomato, chopped
- ½ cup Ranch dressing
- ½ cup barbecue sauce
- 1 (2.8-oz) pouch French fried onions
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
- Cut chicken into ½-inch pieces; season lightly with salt and pepper. Cook chicken in hot drippings over medium heat, stirring occasionally, until chicken is done.
- Toss together chicken, bacon, lettuce, beans, corn, cheese, and tomato in a large bowl.
- Stir together Ranch dressing and barbecue sauce.
- Add dressing and French fried onions just before serving; toss.
