Barbecue-Ranch Chicken Salad

Ingredients

  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 (3-count) pkg romaine lettuce hearts, chopped
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can corn, drained
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 tomato, chopped
  • ½ cup Ranch dressing
  • ½ cup barbecue sauce
  • 1 (2.8-oz) pouch French fried onions

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Cut chicken into ½-inch pieces; season lightly with salt and pepper. Cook chicken in hot drippings over medium heat, stirring occasionally, until chicken is done.
  3. Toss together chicken, bacon, lettuce, beans, corn, cheese, and tomato in a large bowl.
  4. Stir together Ranch dressing and barbecue sauce.
  5. Add dressing and French fried onions just before serving; toss.
