Mediterranean Scrambled Eggs
Orange Wedges
Ingredients
- 2 Tbsp olive oil, divided
- 1 pint grape tomatoes, halved
- 1 clove garlic, minced
- 1 (5-oz) pkg baby spinach
- 8 large eggs, lightly beaten
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp dried oregano
Instructions
- Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat; add tomatoes and garlic.
- Cook 3 to 4 minutes or until tomatoes are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted.
- Whisk together eggs, salt, pepper, and oregano.
- Add remaining 1 Tbsp oil and eggs to skillet, stirring gently. Reduce heat to low; cook 7 minutes or until eggs are set, stirring gently.
Side Dish Ingredients
- 4 navel oranges, cut into wedges

- Serve orange wedges alongside eggs.
