Mediterranean Scrambled Eggs

Ingredients

  • 2 Tbsp olive oil, divided
  • 1 pint grape tomatoes, halved
  • 1 clove garlic, minced
  • 1 (5-oz) pkg baby spinach
  • 8 large eggs, lightly beaten
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp dried oregano

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat; add tomatoes and garlic.
  2. Cook 3 to 4 minutes or until tomatoes are tender, stirring occasionally. Add spinach; cook 1 minute or until wilted.
  3. Whisk together eggs, salt, pepper, and oregano.
  4. Add remaining 1 Tbsp oil and eggs to skillet, stirring gently. Reduce heat to low; cook 7 minutes or until eggs are set, stirring gently.

Side Dish Ingredients

  • 4 navel oranges, cut into wedges

Side Dish Instructions

  1. Serve orange wedges alongside eggs.
