Barbecue Sloppy Joe Muffins

Ingredients

  • 1 lb ground round
  • ½ cup chopped green bell pepper
  • ⅔ cup sweet barbecue sauce
  • 1 Tbsp brown sugar
  • 1 (8.5-oz) pkg cheese biscuit mix (such as Jim 'N Nick's; or see Note)

Instructions

  1. Preheat oven to 400°F. Cook beef and bell pepper in a nonstick skillet over medium heat until beef is browned and crumbly.
  2. Drain beef, return to skillet, and season lightly with salt and pepper. Stir in barbecue sauce and sugar; cook 1 minute. Remove from heat.
  3. Prepare biscuit mix according to package directions. Line a 12-cup standard muffin pan with foil or paper baking cups. Spoon 1 Tbsp batter into each cup. Top each with ¼ cup beef mixture and 1 Tbsp batter.
  4. Bake 15 minutes. Cool slightly, and transfer cups to paper towels to drain again if needed. Seal any leftover muffins, and freeze up to 1 month.

Side Dish Ingredients

  • ½ (10-oz) pkg frozen whole kernel corn
  • 1 Tbsp butter
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook corn according to package directions. Transfer to a bowl; stir in butter while hot. Season with salt to taste.
  2. Cook green beans according to package directions; cut up beans, and season with salt and pepper to taste.
