Greek-Style Chicken Nachos

Ingredients

  • ½ (7.3-oz) pkg baked multigrain pita chips
  • 1 cup shredded rotisserie chicken
  • ½ (8-oz) container plain hummus
  • 1 cup shredded romaine lettuce
  • ½ pint grape tomatoes, halved
  • ¼ cup pitted kalamata olives, halved
  • ¼ cup crumbled feta cheese
  • 3 Tbsp refrigerated cucumber-dill Greek yogurt dip

Instructions

  1. Preheat oven to 350°F. Arrange chips on a foil-lined rimmed baking sheet; top with chicken. Bake 5 minutes or until chips are toasted and chicken is thoroughly heated.
  2. Top with hummus, lettuce, tomatoes, olives, cheese, and yogurt dip.

Side Dish Ingredients

  • ½ English cucumber, sliced
  • ½ small red onion, sliced
  • 1 Tbsp chopped fresh dill
  • 1½ Tbsp extra virgin olive oil
  • 1½ tsp red wine vinegar
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
