Sausage-Egg Casserole
Grapefruit-Spinach SaladIngredients
- ½ lb ground Italian sausage
- 1 cup shredded Cheddar cheese
- 6 large eggs
- ½ cup heavy cream
Instructions
- Preheat oven to 325°F. Cook sausage in a medium skillet over medium-high heat until browned and crumbly.
- Sprinkle ¾ cup cheese in a lightly greased small baking dish. Whisk eggs in a bowl; pour over cheese. Top with sausage and cream; sprinkle with ¼ cup cheese.
- Bake 30 minutes or until set.
Side Dish Ingredients
- 1 grapefruit
- 2 Tbsp extra virgin olive oil
- 2 Tbsp water
- ½ Tbsp balsamic vinegar
- ¼ tsp dried thyme
- ⅛ tsp salt
- 4 cups baby spinach
Side Dish Instructions
- Peel and section grapefruit over a bowl, reserving juice.
- Whisk together oil, water, vinegar, thyme, and salt into reserved juice. Add spinach and grapefruit sections; toss.
