Sausage-Egg Casserole

Ingredients

  • ½ lb ground Italian sausage
  • 1 cup shredded Cheddar cheese
  • 6 large eggs
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 325°F. Cook sausage in a medium skillet over medium-high heat until browned and crumbly.
  2. Sprinkle ¾ cup cheese in a lightly greased small baking dish. Whisk eggs in a bowl; pour over cheese. Top with sausage and cream; sprinkle with ¼ cup cheese.
  3. Bake 30 minutes or until set.

  • 1 grapefruit
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp water
  • ½ Tbsp balsamic vinegar
  • ¼ tsp dried thyme
  • ⅛ tsp salt
  • 4 cups baby spinach

Side Dish Instructions

  1. Peel and section grapefruit over a bowl, reserving juice.
  2. Whisk together oil, water, vinegar, thyme, and salt into reserved juice. Add spinach and grapefruit sections; toss.
