Bacon-Wrapped Stuffed Chicken
Steamed Fresh Green Beans
Ingredients
- ½ cup drained, chopped artichoke hearts
- ⅓ cup drained, chopped oil-packed sun-dried tomatoes
- ¼ cup chopped pitted kalamata olives
- ½ tsp pepper
- 2 boneless, skinless chicken breasts
- 8 slices thin cut bacon
Instructions
- Preheat oven to 400°F. Stir together artichoke hearts, tomatoes, olives, and pepper in a bowl.
- Place chicken between 2 sheets of plastic wrap, and pound to ¼-inch thickness.
- Spoon artichoke mixture down center of each chicken breast; fold chicken over to enclose filling. Wrap each breast with 4 slices bacon; place, seam sides down, in a baking dish.
- Bake 30 minutes or until bacon is crisp and chicken is cooked through.

- ½ lb green beans, trimmed and cut into 2-inch pieces
- 1 Tbsp butter
Side Dish Instructions
- Steam beans in a steamer basket over boiling water 5 minutes or until crisp-tender. Toss with butter; season with salt and pepper to taste.
