Bacon-Wrapped Stuffed Chicken

Ingredients

  • ½ cup drained, chopped artichoke hearts
  • ⅓ cup drained, chopped oil-packed sun-dried tomatoes
  • ¼ cup chopped pitted kalamata olives
  • ½ tsp pepper
  • 2 boneless, skinless chicken breasts
  • 8 slices thin cut bacon

Instructions

  1. Preheat oven to 400°F. Stir together artichoke hearts, tomatoes, olives, and pepper in a bowl.
  2. Place chicken between 2 sheets of plastic wrap, and pound to ¼-inch thickness.
  3. Spoon artichoke mixture down center of each chicken breast; fold chicken over to enclose filling. Wrap each breast with 4 slices bacon; place, seam sides down, in a baking dish.
  4. Bake 30 minutes or until bacon is crisp and chicken is cooked through.

Side Dish Ingredients

  • ½ lb green beans, trimmed and cut into 2-inch pieces
  • 1 Tbsp butter

Side Dish Instructions

  1. Steam beans in a steamer basket over boiling water 5 minutes or until crisp-tender. Toss with butter; season with salt and pepper to taste.
