Sheet Pan Chicken with Potatoes, Green Beans, and Tomatoes

Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- 2 lb small red potatoes, quartered
- 2 (12-oz) pkg thin green beans
- 2 pints grape tomatoes
- ¼ cup olive oil
- 3 Tbsp whole-grain mustard
- 2 Tbsp minced garlic
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp chopped fresh tarragon
Instructions
- Preheat oven to 425°F. Place 2 large rimmed baking sheets in oven while preheating.
- Toss together chicken, potatoes, green beans, tomatoes, oil, mustard, garlic, salt, and pepper in a large bowl. Arrange in an even layer on preheated baking sheets.
- Bake 20 to 25 minutes or until chicken is done and vegetables are tender. Sprinkle with tarragon.
