Asian Chopped Salad with Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1 orange
  • 1 (12-oz) pkg chopped Asian salad kit (such as Fresh Express)
  • 2 Tbsp chopped fresh cilantro
  • 1 small avocado, sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done.
  2. Meanwhile, peel and section orange over a small bowl to collect juices. Combine dressing from salad kit and orange juice.
  3. Combine greens from salad kit, orange sections, cilantro, and dressing mixture; toss.
  4. Thinly slice chicken. Top salad with chicken and avocado; sprinkle with wontons and nuts from kit.
