Vegan Black Bean and Sweet Potato Salad

Ingredients

  • 3 sweet potatoes, peeled and chopped
  • 1 small onion, sliced
  • 5 Tbsp olive oil, divided
  • 1½ tsp curry powder, divided
  • 2 (15-oz) can black beans, drained and rinsed
  • 2 (5-oz) pkg baby spinach
  • ½ cup chopped fresh cilantro
  • 1½ Tbsp fresh lemon juice
  • 1½ Tbsp agave nectar

Instructions

  1. Preheat oven to 400°F.
  2. Place sweet potatoes and onion on a large rimmed baking sheet; toss with 1 Tbsp oil, 1 tsp curry powder, ¼ tsp salt and ¼ tsp pepper.
  3. Bake 20 to 30 minutes or until browned, stirring after 10 minutes.
  4. Combine sweet potato mixture, black beans, spinach and cilantro.
  5. Whisk together remaining 4 Tbsp olive oil, ½ tsp curry powder, ¼ tsp salt, ¼ tsp pepper, lemon juice and agave nectar; drizzle over salad.
