One Dish Dinner
Vegan Black Bean and Sweet Potato Salad

Ingredients
- 3 sweet potatoes, peeled and chopped
- 1 small onion, sliced
- 5 Tbsp olive oil, divided
- 1½ tsp curry powder, divided
- 2 (15-oz) can black beans, drained and rinsed
- 2 (5-oz) pkg baby spinach
- ½ cup chopped fresh cilantro
- 1½ Tbsp fresh lemon juice
- 1½ Tbsp agave nectar
Instructions
- Preheat oven to 400°F.
- Place sweet potatoes and onion on a large rimmed baking sheet; toss with 1 Tbsp oil, 1 tsp curry powder, ¼ tsp salt and ¼ tsp pepper.
- Bake 20 to 30 minutes or until browned, stirring after 10 minutes.
- Combine sweet potato mixture, black beans, spinach and cilantro.
- Whisk together remaining 4 Tbsp olive oil, ½ tsp curry powder, ¼ tsp salt, ¼ tsp pepper, lemon juice and agave nectar; drizzle over salad.
