Cauliflower and Sweet Potato Hash with Sausage and Kale

Ingredients

  • 1 lb ground lean turkey breakfast sausage
  • 1 small onion, diced
  • 1 (12-oz) pkg cauliflower florets, coarsely chopped
  • 1 (5-oz) pkg baby kale 
  • ¾ cup low-sodium chicken broth
  • ½ cup shredded parmesan cheese

Instructions

  1. Cook sausage and onion in a large nonstick skillet over medium heat, 5 to 7 minutes or until sausage is browned and crumbled.
  2. Drain; reserving 2 Tbsp drippings. Add cauliflower to skillet; sauté 2 minutes or until edges are browned.
  3. Add broth and kale to skillet, cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
  4. Uncover and boil over high heat until liquid is nearly evaporated. Sprinkle with cheese, season lightly with salt and pepper; toss.
