Cauliflower and Sweet Potato Hash with Sausage and Kale
Ingredients
- 1 lb ground lean turkey breakfast sausage
- 1 small onion, diced
- 1 (12-oz) pkg cauliflower florets, coarsely chopped
- 1 (5-oz) pkg baby kale
- ¾ cup low-sodium chicken broth
- ½ cup shredded parmesan cheese
Instructions
- Cook sausage and onion in a large nonstick skillet over medium heat, 5 to 7 minutes or until sausage is browned and crumbled.
- Drain; reserving 2 Tbsp drippings. Add cauliflower to skillet; sauté 2 minutes or until edges are browned.
- Add broth and kale to skillet, cover and reduce heat to medium. Cook 6 to 7 minutes or until cauliflower is tender.
- Uncover and boil over high heat until liquid is nearly evaporated. Sprinkle with cheese, season lightly with salt and pepper; toss.
