Sheet Pan Chicken with Potatoes, Green Beans, and Tomatoes

Ingredients
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- ¾ lb small red potatoes, quartered
- 1 (12-oz) pkg thin green beans
- 1 cup grape tomatoes
- 1½ Tbsp olive oil
- 1 Tbsp whole-grain mustard
- 2 tsp minced garlic
- ¼ tsp salt
- ¼ tsp pepper
- 1 tsp chopped fresh tarragon
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
- Toss together chicken, potatoes, green beans, tomatoes, oil, mustard, garlic, salt, and pepper in a large bowl. Arrange in an even layer on preheated baking sheet.
- Bake 20 to 25 minutes or until chicken is done and vegetables are tender. Sprinkle with tarragon.
