Kids' Zucchini Pizza

- 3 zucchini
- 2 large eggs, lightly beaten
- ½ tsp Italian seasoning
- 3 cups shredded mozzarella cheese, divided
- ½ cup shredded Parmesan cheese
- ¼ cup cornstarch
- ½ lb ground beef
- 2 cloves garlic, minced
- ⅓ cup sliced pepperoni
- 1 (14-oz) jar pizza sauce
Instructions
- Preheat oven to 425°F. Grate zucchini on large holes of a box grater. Squeeze out excess moisture between several paper towels to yield about 4 cups zucchini.
- Toss together zucchini, eggs, Italian seasoning, 1 cup mozzarella, Parmesan, and cornstarch. Press into a 13- x 10-inch rectangle on a rimmed baking sheet. Sprinkle lightly with salt and pepper.
- Bake 25 to 30 minutes or until golden and firm.
- Meanwhile, cook beef and garlic in a nonstick skillet until beef is browned and crumbly. Drain.
- Sprinkle beef, pepperoni, and 2 cups mozzarella over pizza. Bake 6 to 8 minutes longer or until cheese is melted.
- Cut into squares; serve with pizza sauce.
