Kids' Zucchini Pizza

Ingredients

  • 3 zucchini
  • 2 large eggs, lightly beaten
  • ½ tsp Italian seasoning
  • 3 cups shredded mozzarella cheese, divided
  • ½ cup shredded Parmesan cheese
  • ¼ cup cornstarch
  • ½ lb ground beef
  • 2 cloves garlic, minced
  • ⅓ cup sliced pepperoni
  • 1 (14-oz) jar pizza sauce

Instructions

  1. Preheat oven to 425°F. Grate zucchini on large holes of a box grater. Squeeze out excess moisture between several paper towels to yield about 4 cups zucchini.
  2. Toss together zucchini, eggs, Italian seasoning, 1 cup mozzarella, Parmesan, and cornstarch. Press into a 13- x 10-inch rectangle on a rimmed baking sheet. Sprinkle lightly with salt and pepper.
  3. Bake 25 to 30 minutes or until golden and firm.
  4. Meanwhile, cook beef and garlic in a nonstick skillet until beef is browned and crumbly. Drain.
  5. Sprinkle beef, pepperoni, and 2 cups mozzarella over pizza. Bake 6 to 8 minutes longer or until cheese is melted.
  6. Cut into squares; serve with pizza sauce.
