Crunchy Taco Mac and Cheese
Southwest Salad
Ingredients
- 1 (7.25-oz) box macaroni and cheese
- ⅓ cup sour cream
- ½ lb ground beef
- ½ cup chopped onion
- ½ (1.25-oz) envelope taco seasoning mix
- 1 (10-oz) can diced tomatoes and green chiles, drained
- 1 cup shredded colby-Jack cheese, divided
- 1 cup crushed tortilla chips
Instructions
- Preheat oven to 400°F. Prepare macaroni and cheese according to package directions; stir in sour cream.
- Meanwhile, cook beef and onion in a skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in taco seasoning and tomatoes; cook over medium heat until very thick.
- Spoon half of macaroni and cheese mixture into a greased 8-inch baking dish. Top with meat mixture, ½ cup cheese, and remaining macaroni and cheese. Cover and bake 15 minutes.
- Uncover, sprinkle with tortilla chips and ½ cup cheese. Bake 5 minutes longer.
