Crunchy Taco Mac and Cheese

Ingredients

  • 1 (7.25-oz) box macaroni and cheese
  • ⅓ cup sour cream
  • ½ lb ground beef
  • ½ cup chopped onion
  • ½ (1.25-oz) envelope taco seasoning mix
  • 1 (10-oz) can diced tomatoes and green chiles, drained
  • 1 cup shredded colby-Jack cheese, divided
  • 1 cup crushed tortilla chips

Instructions

  1. Preheat oven to 400°F. Prepare macaroni and cheese according to package directions; stir in sour cream.
  2. Meanwhile, cook beef and onion in a skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  3. Stir in taco seasoning and tomatoes; cook over medium heat until very thick.
  4. Spoon half of macaroni and cheese mixture into a greased 8-inch baking dish. Top with meat mixture, ½ cup cheese, and remaining macaroni and cheese. Cover and bake 15 minutes.
  5. Uncover, sprinkle with tortilla chips and ½ cup cheese. Bake 5 minutes longer.
