Skillet Sausages and Peppers
Spicy Basil Brown RiceIngredients
- ¾ lb lean Italian turkey sausage links (such as Jennie-O)
- 1 Tbsp olive oil
- 1 (8-oz) pkg sliced bell pepper and onion medley
- 1 Tbsp tomato paste
- 1 clove garlic, minced
- 1 (14.5-oz) can diced tomatoes, drained
- ½ cup dry white wine (or use low-sodium chicken broth)
Instructions
- Cook sausage in hot oil in a large, deep skillet over medium-high heat 3 to 4 minutes per side or until browned. Remove from skillet; keep warm.
- Add bell pepper and onion medley to skillet; cook, stirring occasionally, 6 minutes or until just tender.
- Stir in tomato paste and garlic; cook, stirring constantly, 1 minute. Add tomatoes and wine; bring to a boil, reduce heat, and simmer.
- Halve sausages lengthwise. Return to skillet, and simmer 7 to 8 minutes or until mixture is thickened and sausages are done.
Side Dish Ingredients
- 1 (8.8-oz) pouch microwavable brown rice
- 1½ Tbsp chopped fresh basil
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Microwave rice according to package directions; stir in basil, salt, and pepper.
