Southwest Chicken Dinner Bowl

Ingredients

  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 romaine lettuce heart, chopped
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can corn, drained
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 tomato, chopped
  • ½ cup Ranch dressing
  • ½ cup barbecue sauce
  • 2 (2.8-oz) pouches French fried onions

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Cut chicken into ½-inch pieces; season lightly with salt and pepper. Cook chicken in hot drippings over medium heat, stirring occasionally, until chicken is done.
  3. Arrange chicken, bacon, lettuce, beans, corn, cheese, and tomato in a large bowl.
  4. Stir together Ranch dressing and barbecue sauce.
  5. Add dressing and 1 pouch French fried onions just before serving; toss. Serve 1 pouch French fried onions alongside.
