Bacon, Egg and Avocado Toasts

Ingredients
- 3 Tbsp reduced-fat mayonnaise
- 2 Tbsp chopped fresh basil
- 1 tsp fresh lemon juice
- 4 large eggs, beaten
- ¼ tsp kosher salt
- ¼ tsp pepper
- 1 tsp olive oil
- 4 (1-oz) slices whole-grain bread, toasted
- 1 small avocado, pitted and mashed
- 2 tomatoes, sliced
- 4 slices center-cut bacon, cooked and crumbled
Instructions
- Combine mayonnaise, basil, and lemon juice.
- Cook eggs, salt and pepper in hot oil in a large nonstick skillet over medium heat, without stirring, 1 to 2 minutes or until eggs begin to set.
- Cook, stirring constantly, until eggs are thickened and set.
- Spread basil mayonnaise over toast; top with avocado, eggs, tomatoes and bacon.
