Bacon, Egg and Avocado Toasts

Ingredients

  • 3 Tbsp reduced-fat mayonnaise
  • 2 Tbsp chopped fresh basil
  • 1 tsp fresh lemon juice
  • 4 large eggs, beaten
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 tsp olive oil
  • 4 (1-oz) slices whole-grain bread, toasted
  • 1 small avocado, pitted and mashed
  • 2 tomatoes, sliced
  • 4 slices center-cut bacon, cooked and crumbled

Instructions

  1. Combine mayonnaise, basil, and lemon juice.
  2. Cook eggs, salt and pepper in hot oil in a large nonstick skillet over medium heat, without stirring, 1 to 2 minutes or until eggs begin to set.
  3. Cook, stirring constantly, until eggs are thickened and set.
  4. Spread basil mayonnaise over toast; top with avocado, eggs, tomatoes and bacon.
