Chicken Frittata with Chimichurri
Roasted Radishes
Ingredients
- 2 cups packed fresh cilantro leaves
- ¼ cup white wine vinegar
- 3 cloves garlic
- ¾ tsp salt, divided
- ½ tsp ground cumin
- ¼ cup plus 1 Tbsp olive oil
- 8 eggs
- ½ cup milk or half-and-half
- 1 Tbsp snipped fresh cilantro
- 1 (4-oz) can diced green chiles
- 1 cup shredded cooked chicken
- ⅔ cup canned black beans, rinsed and drained
- ½ cup shredded Monterey Jack cheese (2 oz)
Instructions
- For Chimichurri Sauce, in a blender combine 2 cups cilantro leaves, vinegar, garlic, ½ tsp salt, and cumin. With the processor running, slowly add ¼ cup oil through opening in the lid until mixture is smooth.
- Preheat broiler. In a bowl whisk together eggs, milk, 1 Tbsp cilantro, and ¼ tsp salt. In an extra-large broiler-proof nonstick skillet heat 1 Tbsp oil over medium. Add chiles; cook and stir 3 minutes. Scatter chicken and beans evenly in skillet.
- Pour egg mixture over chicken and beans; cook over medium. As mixture sets, run a spatula around edge of skillet, lifting egg mixture so uncooked portion flows underneath. Continue cooking and lifting edges until egg mixture is almost set (surface will be moist). Sprinkle with cheese.
- Place skillet under broiler 4 to 5 inches from heat. Broil 1 to 2 minutes or until top is just set and cheese is melted. If desired, top with Chimichurri Sauce and additional fresh cilantro leaves. Cut into wedges.
Side Dish Ingredients
- 1½ lb radishes, trimmed, scrubbed, and halved
- 3 Tbsp olive oil
- 2 Tbsp white wine vinegar
- 1 Tbsp snipped fresh chives
- ½ tsp Dijon-style mustard
- ¼ tsp black pepper
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 425°F. In a bowl toss radishes with 1 Tbsp of the olive oil. Place radishes in a 15x10-inch baking pan. Roast, uncovered, 30 to 35 minutes or until tender and lightly browned, stirring once.
- For vinaigrette, in a screw-top jar combine the remaining 2 Tbsp olive oil and the remaining ingredients. Cover; shake well. Drizzle vinaigrette over radishes; toss to coat.
