Jerk Chicken Thighs
Mango Salsa and Mashed Sweet Potatoes
Ingredients
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 3 Tbsp Jerk seasoning
- 1½ lb bone-in, skin-on chicken thighs, skinned
- ¼ cup low-sodium chicken broth
- 2 tsp dried oregano
- ½ tsp salt
Instructions
- Place onion, garlic, and Jerk seasoning in a 5- to 7-quart slow cooker.
- Add chicken thighs, broth, oregano and salt to cooker.
- Cover and cook on LOW 6 hours or until chicken is done.
- Serve topped with Mango Salsa.
Side Dish Ingredients
- 2 mangoes, peeled and diced
- 1 avocado, diced
- 1 jalapeño pepper, seeded and minced
- ¼ cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1 Tbsp extra virgin olive oil
- 2 lb sweet potatoes, peeled and cubed
- ¼ cup coconut milk
Side Dish Instructions
- Stir together mango, avocado, jalapeño, cilantro, lime juice, and oil in a small bowl; season with salt and pepper to taste.
- Bring potatoes and water to cover to a boil in a saucepan; boil 10 minutes or until tender. Drain and return to pan.
- Add coconut milk, and mash with a potato masher to desired consistency; season to taste.
