Jerk Chicken Thighs

Mango Salsa and Mashed Sweet Potatoes

Ingredients

  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 Tbsp Jerk seasoning
  • 1½ lb bone-in, skin-on chicken thighs, skinned
  • ¼ cup low-sodium chicken broth
  • 2 tsp dried oregano
  • ½ tsp salt

Instructions

  1. Place onion, garlic, and Jerk seasoning in a 5- to 7-quart slow cooker.
  2. Add chicken thighs, broth, oregano and salt to cooker.
  3. Cover and cook on LOW 6 hours or until chicken is done.
  4. Serve topped with Mango Salsa.

Side Dish Ingredients

  • 2 mangoes, peeled and diced
  • 1 avocado, diced
  • 1 jalapeño pepper, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice
  • 1 Tbsp extra virgin olive oil
  • 2 lb sweet potatoes, peeled and cubed
  • ¼ cup coconut milk

Side Dish Instructions

  1. Stir together mango, avocado, jalapeño, cilantro, lime juice, and oil in a small bowl; season with salt and pepper to taste.
  2. Bring potatoes and water to cover to a boil in a saucepan; boil 10 minutes or until tender. Drain and return to pan.
  3. Add coconut milk, and mash with a potato masher to desired consistency; season to taste.
