Skillet Sausages and Peppers

Ingredients

  • 1½ lb lean Italian turkey sausage links (such as Jennie-O)
  • 2 Tbsp olive oil
  • 2 (8-oz) pkg sliced bell pepper and onion medley (see Note)
  • 2 Tbsp tomato paste 
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can diced tomatoes
  • 1 cup dry white wine (or use low-sodium chicken broth)

Instructions

  1. Cook sausages in hot oil in a large, deep skillet over medium-high heat 3 to 4 minutes per side or until browned. Remove from skillet; keep warm.
  2. Add bell pepper and onion medley to skillet; cook, stirring occasionally, 6 minutes or until just tender.
  3. Stir in tomato paste and garlic; cook, stirring constantly, 1 minute. Add tomatoes and wine; bring to a boil, reduce heat, and simmer.
  4. Halve sausages lengthwise. Return to skillet, and simmer 7 to 8 minutes or until thickened and sausages are done.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable brown rice
  • 3 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Microwave rice according to package directions; stir in basil, salt, and pepper.
