Skillet Mozzarella Chicken Caprese

Ingredients

  • 1 (8-oz) boneless, skinless chicken breast, cut in half lengthwise
  • 2 tsp extra virgin olive oil
  • 1 cup marinara sauce
  • ½ cup shredded part-skim mozzarella cheese
  • 1 cup grape tomatoes, cut in half
  • ¼ cup fresh basil, thinly sliced
  • 1 Tbsp balsamic glaze (or use balsamic vinegar)

Instructions

  1. Preheat broiler. Cook chicken in hot oil in a cast-iron skillet over medium-high heat 3 minutes per side.
  2. Spoon marinara sauce over and around chicken; cook 5 minutes. Sprinkle cheese over chicken; top with tomatoes.
  3. Transfer skillet to oven, and broil 1 to 2 minutes or until cheese is bubbly and browned. Sprinkle with basil; drizzle with glaze.

  • 2 zucchini
  • 1 clove garlic, minced
  • 1 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ Tbsp extra virgin olive oil

Side Dish Instructions

  1. Cut zucchini into noodles using a spiralizer. Or cut lengthwise into slices. Stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  2. Cook zucchini, garlic, basil, salt, and pepper in hot oil in a large skillet over medium-high heat 3 minutes or until crisp-tender, stirring often.
