Cheesy Ham and Green Bean Casserole

Ingredients

  • ½ (16-oz) pkg rigatoni pasta
  • ¼ cup butter
  • ½ cup chopped onion
  • ½ lb green beans, trimmed and cut into 1-inch pieces
  • ½ cup all-purpose flour
  • 4 cups milk
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 2 tsp Dijon mustard
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • 1 (16-oz) pkg chopped ham
  • 1 cup fish-shaped cheese-flavored crackers

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium heat. Add onion, and cook, stirring occasionally, 5 minutes or until just tender. Add green beans, and cook, stirring occasionally, 2 minutes.
  3. Sprinkle flour over vegetables; cook, stirring constantly, 2 minutes. Gradually stir in milk, and cook until thickened and bubbly. Stir in cheese, mustard, thyme, and garlic powder until cheese is melted.
  4. Stir in ham and pasta. Season with salt and pepper to taste. Spoon mixture into a lightly greased 2½-quart baking dish.
  5. Bake 20 to 25 minutes or until hot and bubbly. Sprinkle with crackers.

  • 2 Roma tomatoes, chopped
  • ¾ cup balsamic vinaigrette
