Cheesy Ham and Green Bean Casserole

- ½ (16-oz) pkg rigatoni pasta
- ¼ cup butter
- ½ cup chopped onion
- ½ lb green beans, trimmed and cut into 1-inch pieces
- ½ cup all-purpose flour
- 4 cups milk
- 1 (8-oz) pkg shredded mozzarella cheese
- 2 tsp Dijon mustard
- 1 tsp dried thyme
- ½ tsp garlic powder
- 1 (16-oz) pkg chopped ham
- 1 cup fish-shaped cheese-flavored crackers
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions.
- Meanwhile, melt butter in a large skillet over medium heat. Add onion, and cook, stirring occasionally, 5 minutes or until just tender. Add green beans, and cook, stirring occasionally, 2 minutes.
- Sprinkle flour over vegetables; cook, stirring constantly, 2 minutes. Gradually stir in milk, and cook until thickened and bubbly. Stir in cheese, mustard, thyme, and garlic powder until cheese is melted.
- Stir in ham and pasta. Season with salt and pepper to taste. Spoon mixture into a lightly greased 2½-quart baking dish.
- Bake 20 to 25 minutes or until hot and bubbly. Sprinkle with crackers.

- 2 Roma tomatoes, chopped
- ¾ cup balsamic vinaigrette
