Swiss-Mushroom Burgers with Smoked Paprika Mayo
Herbed Sweet Potato Waffle Fries
Ingredients
- 3 Tbsp balsamic vinegar
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 6 portobello mushroom caps, stemmed
- 6 (0.67-oz) slices Swiss cheese
- ⅓ cup organic roasted garlic mayonnaise
- ½ tsp smoked paprika
- 6 whole wheat hamburger buns, toasted
- 2 tomatoes, sliced
Instructions
- Combine vinegar, oil, salt, and pepper in a large zip-top freezer bag; add mushrooms, seal bag, and let stand 5 minutes or until liquid is absorbed.
- Cook mushrooms, in batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until tender, topping with cheese during last 2 minutes of cooking.
- Combine mayonnaise and paprika; spread over cut sides of buns. Serve mushrooms on buns with tomatoes.

- 1 (20-oz) pkg frozen sweet potato waffle fries
- 2 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh basil
- ½ tsp garlic salt
- ½ tsp pepper
Side Dish Instructions
- Bake fries according to package directions. Toss hot fries with parsley, basil, garlic salt, and pepper.
