Swiss-Mushroom Burgers with Smoked Paprika Mayo

Ingredients

  • 3 Tbsp balsamic vinegar
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 6 portobello mushroom caps, stemmed
  • 6 (0.67-oz) slices Swiss cheese
  • ⅓ cup organic roasted garlic mayonnaise
  • ½ tsp smoked paprika
  • 6 whole wheat hamburger buns, toasted
  • 2 tomatoes, sliced

Instructions

  1. Combine vinegar, oil, salt, and pepper in a large zip-top freezer bag; add mushrooms, seal bag, and let stand 5 minutes or until liquid is absorbed.
  2. Cook mushrooms, in batches, in a large nonstick skillet over medium heat 3 to 4 minutes per side or until tender, topping with cheese during last 2 minutes of cooking.
  3. Combine mayonnaise and paprika; spread over cut sides of buns. Serve mushrooms on buns with tomatoes.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen sweet potato waffle fries
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh basil
  • ½ tsp garlic salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bake fries according to package directions. Toss hot fries with parsley, basil, garlic salt, and pepper.
