Sweet-and-Sour Chicken
Sesame Sweet Potato and Zucchini "Noodles"
Ingredients
- ⅓ cup low-sodium soy sauce
- 2 Tbsp honey
- 1 Tbsp minced garlic
- 1 Tbsp ginger paste
- 1½ lb boneless, skinless chicken thighs, cut into 1-inch chunks
- 2 red bell peppers, cut into chunks
- 1 (16-oz) container cubed pineapple
Instructions
- Whisk together soy sauce, honey, garlic, and ginger; add chicken, and toss.
- Cook chicken and soy sauce mixture in a large nonstick skillet over medium-high heat 6 minutes or until chicken is done. Add peppers, and cook 5 minutes or until tender. Stir in pineapple.
- Serve over Sesame Sweet Potato and Zucchini "Noodles" recipe.

- 1 (16-oz) pkg sweet potato noodles
- 1 (16-oz) pkg zucchini noodles
- 2 Tbsp dark sesame oil
- ¼ cup chopped fresh cilantro
- 1 Tbsp toasted sesame seeds
- ¼ tsp salt
Side Dish Instructions
- Cook potatoes and zucchini in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with cilantro, sesame seeds, and salt.
