Sweet-and-Sour Chicken

Sesame Sweet Potato and Zucchini "Noodles"

Ingredients

  • ⅓ cup low-sodium soy sauce
  • 2 Tbsp honey
  • 1 Tbsp minced garlic
  • 1 Tbsp ginger paste
  • 1½ lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 2 red bell peppers, cut into chunks
  • 1 (16-oz) container cubed pineapple

Instructions

  1. Whisk together soy sauce, honey, garlic, and ginger; add chicken, and toss.
  2. Cook chicken and soy sauce mixture in a large nonstick skillet over medium-high heat 6 minutes or until chicken is done. Add peppers, and cook 5 minutes or until tender. Stir in pineapple.
  3. Serve over Sesame Sweet Potato and Zucchini "Noodles" recipe.

Side Dish Ingredients

  • 1 (16-oz) pkg sweet potato noodles
  • 1 (16-oz) pkg zucchini noodles
  • 2 Tbsp dark sesame oil
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp toasted sesame seeds
  • ¼ tsp salt

Side Dish Instructions

  1. Cook potatoes and zucchini in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with cilantro, sesame seeds, and salt.
