South of the Border Meat Loaf
Lemon-Roasted Green BeansIngredients
- ½ lb ground beef
- 4 green onions, chopped
- ½ cup chopped green bell pepper
- ¼ cup picante sauce, divided
- ⅓ cup panko breadcrumbs
- 1 egg white
- ½ tsp ground cumin
- 1 Tbsp ketchup
Instructions
- Preheat oven to 350°F. Mix together beef, onions, bell pepper, 3 Tbsp picante sauce, breadcrumbs, egg white, and cumin in a bowl using your hands.
- Transfer to a lightly greased baking sheet; shape into an oval about 1½ inches thick.
- Bake 45 minutes or until a meat thermometer inserted into center reads 165°F.
- Stir together 1 Tbsp picante sauce and ketchup; brush over loaf. Bake 5 minutes longer. Let stand 5 minutes before slicing.
Side Dish Ingredients
- ½ lb green beans, trimmed
- 1½ Tbsp balsamic vinegar
- 1 Tbsp fresh lemon juice
- 2 tsp olive oil
Side Dish Instructions
- Place all ingredients in a zip-top plastic freezer bag. Seal and chill 30 minutes.
- Preheat oven to 350°F. Remove beans from marinade; discard marinade. Arrange beans in a single layer on a foil-lined baking sheet.
- Bake 12 to 15 minutes or until crisp-tender. Season with salt and pepper to taste.
