South of the Border Meat Loaf

Lemon-Roasted Green Beans

Ingredients

  • ½ lb ground beef
  • 4 green onions, chopped
  • ½ cup chopped green bell pepper
  • ¼ cup picante sauce, divided
  • ⅓ cup panko breadcrumbs
  • 1 egg white
  • ½ tsp ground cumin
  • 1 Tbsp ketchup

Instructions

  1. Preheat oven to 350°F. Mix together beef, onions, bell pepper, 3 Tbsp picante sauce, breadcrumbs, egg white, and cumin in a bowl using your hands.
  2. Transfer to a lightly greased baking sheet; shape into an oval about 1½ inches thick.
  3. Bake 45 minutes or until a meat thermometer inserted into center reads 165°F.
  4. Stir together 1 Tbsp picante sauce and ketchup; brush over loaf. Bake 5 minutes longer. Let stand 5 minutes before slicing.

Side Dish Ingredients

  • ½ lb green beans, trimmed
  • 1½ Tbsp balsamic vinegar
  • 1 Tbsp fresh lemon juice
  • 2 tsp olive oil

Side Dish Instructions

  1. Place all ingredients in a zip-top plastic freezer bag. Seal and chill 30 minutes.
  2. Preheat oven to 350°F. Remove beans from marinade; discard marinade. Arrange beans in a single layer on a foil-lined baking sheet.
  3. Bake 12 to 15 minutes or until crisp-tender. Season with salt and pepper to taste.
