Italian Sirloin Steak with Mushroom Sauce

Ingredients

  • 1½ lb boneless sirloin steak
  • 3 (8-oz) pkg sliced mushrooms
  • ¾ cup dry red wine
  • 1½ tsp sugar
  • 1 tsp Italian seasoning
  • 2 Tbsp olive oil, divided
  • ¾ cup pasta sauce
  • ¾ cup finely chopped red onion
  • 3 green onion, finely chopped

Instructions

  1. Combine steak, mushrooms, wine, sugar, Italian seasoning and ½ tsp pepper in a shallow pan.
  2. Cover and marinate 2 hours or overnight, turning occasionally. Remove steak, reserving marinade.
  3. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
  4. Add steak; sprinkle with ⅛ tsp salt; cook 4 minutes per side or until to desired degree of doneness. Remove steak.
  5. Combine mushrooms and reserved marinade, pasta sauce, onion and ¼ tsp salt in skillet.
  6. Boil 4 minutes or until thickened. Remove from heat; stir in remaining 1 Tbsp oil.
  7. Thinly slice steak; top evenly with sauce mixture and green onion.

Side Dish Ingredients

  • 2 lb red potatoes, peeled and cut into 1-inch chunks
  • ¾ cup light sour cream
  • 1½ Tbsp extra virgin olive oil
  • 2 cloves garlic, minced

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large Dutch oven.
  2. Simmer 20 minutes or until tender; drain.
  3. Mash potatoes to desired consistency with sour cream, oil, ¾ tsp salt, ½ tsp pepper and the garlic.
