Sausage and Cabbage Smothered Baked Potatoes

Ingredients
- 6 (6-oz) red potatoes
- 3 Tbsp canola oil, divided
- 6 fully cooked chicken apple sausage links, sliced
- 9 cups chopped green cabbage
- 2 cups chopped red onion
- 3 green bell peppers, chopped
- ¾ cup light sour cream
- 1 Tbsp prepared horseradish sauce
Instructions
- Pierce each potato with a fork in several areas.
- Wrap each potato in a paper towel; microwave at HIGH 15 minutes or until tender.
- Meanwhile, heat a Dutch oven coated with cooking spray over medium-high heat; cook sausage until browned and set aside on separate plate.
- Coat skillet with cooking spray, add cabbage, onion and bell pepper. Coat vegetables with cooking spray; cook 15 minutes or until cabbage begins to brown, stirring occasionally.
- Stir in sausage and ¼ tsp salt into the cabbage mixture; cook 1 minute to heat through.
- Cut potatoes in half, fluff with a fork.
- Combine sour cream, horseradish and ⅛ tsp salt; spoon equal amounts on each potato and top with sausage mixture.
