Sausage and Cabbage Smothered Baked Potatoes

Ingredients

  • 6 (6-oz) red potatoes
  • 3 Tbsp canola oil, divided
  • 6 fully cooked chicken apple sausage links, sliced
  • 9 cups chopped green cabbage
  • 2 cups chopped red onion
  • 3 green bell peppers, chopped
  • ¾ cup light sour cream
  • 1 Tbsp prepared horseradish sauce

Instructions

  1. Pierce each potato with a fork in several areas.
  2. Wrap each potato in a paper towel; microwave at HIGH 15 minutes or until tender.
  3. Meanwhile, heat a Dutch oven coated with cooking spray over medium-high heat; cook sausage until browned and set aside on separate plate.
  4. Coat skillet with cooking spray, add cabbage, onion and bell pepper. Coat vegetables with cooking spray; cook 15 minutes or until cabbage begins to brown, stirring occasionally.
  5. Stir in sausage and ¼ tsp salt into the cabbage mixture; cook 1 minute to heat through.
  6. Cut potatoes in half, fluff with a fork.
  7. Combine sour cream, horseradish and ⅛ tsp salt; spoon equal amounts on each potato and top with sausage mixture.
