Linguine with Scampi

Garlic Dill New Potatoes

Ingredients

  • 1½ (12-oz) pkg linguini pasta
  • 1 cup and 2 Tbsp butter
  • 1½ lb shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 3 Tbsp lemon juice
  • ¼ cup and 1 tsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Place the butter or margarine in 9- x 13-inch glass baking dish, and place in oven until butter melts.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, and transfer to a large serving bowl.
  3. Stir the shrimp, garlic, and lemon juice into the melted butter. Return dish to oven. Bake for 3 minutes. Remove from the oven, and mix in parsley; continue baking until shrimp are opaque, about 2 minutes longer. Season with salt and pepper.
  4. Spoon the shrimp and butter sauce over the linguini, and toss to coat the pasta. Serve immediately.

Side Dish Ingredients

  • 9½ medium red potatoes, cubed
  • 3 Tbsp and 1¾ tsp butter, melted
  • 1 Tbsp and ½ tsp chopped fresh dill
  • 2½ tsp minced garlic
  • ¼ tsp salt

Side Dish Instructions

  1. Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
  2. In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.
