Linguine with Scampi
Garlic Dill New PotatoesIngredients
- 1½ (12-oz) pkg linguini pasta
- 1 cup and 2 Tbsp butter
- 1½ lb shrimp, peeled and deveined
- 6 cloves garlic, minced
- 3 Tbsp lemon juice
- ¼ cup and 1 tsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Place the butter or margarine in 9- x 13-inch glass baking dish, and place in oven until butter melts.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain, and transfer to a large serving bowl.
- Stir the shrimp, garlic, and lemon juice into the melted butter. Return dish to oven. Bake for 3 minutes. Remove from the oven, and mix in parsley; continue baking until shrimp are opaque, about 2 minutes longer. Season with salt and pepper.
- Spoon the shrimp and butter sauce over the linguini, and toss to coat the pasta. Serve immediately.
Side Dish Ingredients
- 9½ medium red potatoes, cubed
- 3 Tbsp and 1¾ tsp butter, melted
- 1 Tbsp and ½ tsp chopped fresh dill
- 2½ tsp minced garlic
- ¼ tsp salt
Side Dish Instructions
- Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
- In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.
