Chicken Waldorf Wraps

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ⅔ cup mayonnaise
  • ½ cup sour cream
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey
  • 1 tsp dried crushed rosemary
  • 2 apples, cored and chopped (preferably Granny Smith)
  • ½ cup sweetened dried cranberries
  • ½ cup thinly sliced celery
  • 1 (2-oz) pkg chopped pecans
  • 1 head green leaf lettuce, separated into leaves

Instructions

  1. Cook chicken in boiling water to cover in a saucepan 20 minutes or until done; drain, cool, and shred chicken.
  2. Whisk together mayonnaise, sour cream, lemon juice, honey, and rosemary in a large bowl. Add chicken, apples, cranberries, celery, and nuts. Serve chicken salad on lettuce leaves.
