Chicken Waldorf Wraps
Blueberry Muffins
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ⅔ cup mayonnaise
- ½ cup sour cream
- 1 Tbsp fresh lemon juice
- 1 Tbsp honey
- 1 tsp dried crushed rosemary
- 2 apples, cored and chopped (preferably Granny Smith)
- ½ cup sweetened dried cranberries
- ½ cup thinly sliced celery
- 1 (2-oz) pkg chopped pecans
- 1 head green leaf lettuce, separated into leaves
Instructions
- Cook chicken in boiling water to cover in a saucepan 20 minutes or until done; drain, cool, and shred chicken.
- Whisk together mayonnaise, sour cream, lemon juice, honey, and rosemary in a large bowl. Add chicken, apples, cranberries, celery, and nuts. Serve chicken salad on lettuce leaves.
