Meatball Sandwich Bake

Ingredients

  • 1 (16-oz) loaf French bread, cut into ¼-inch-thick slices
  • ⅓ cup olive oil
  • 1 (32-oz) pkg frozen Italian-style meatballs, thawed 
  • 2 (24-oz) cans pasta sauce
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Brush 1 side of each bread slice with oil. Line bottom and sides of a 13- x 9-inch baking dish with bread, oil sides up and slightly overlapping.
  2. Bake 3 to 5 minutes or until edges are lightly browned.
  3. Stir together meatballs and pasta sauce; spoon over bread. Bake 25 minutes or until hot and bubbly; sprinkle with cheese, and bake 5 minutes longer or until melted.

Side Dish Ingredients

  • 1 (12-oz) pkg classic salad mix
  • 2 green onions, thinly sliced
  • 3 radishes, thinly sliced
  • 2 Roma tomatoes, chopped
  • ½ cup Greek vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl just before serving.
