Crunchy Apple Slaw

Ingredients

  • 2 lb boneless pork loin chops
  • 2 large eggs, lightly beaten
  • ½ cup all-purpose flour
  • ¼ cup olive oil
  • 1 lemon, cut into wedges

Instructions

  1. Dip pork in eggs, and dredge in flour, shaking off excess.
  2. Cook pork, in 2 batches, in 2 Tbsp hot oil per batch 4 to 5 minutes per side or until golden brown. Season lightly with salt and pepper while warm; drizzle lemon juice over pork.

Side Dish Ingredients

  • 3 Tbp olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 (16-oz) pkg tricolor coleslaw
  • 2 red apples, thinly sliced (preferably a sweet, crisp variety)
  • 2 green onions, thinly sliced

Side Dish Instructions

  1. Whisk together oil, vinegar, and honey in a bowl. Add coleslaw, apples, and green onions; toss.
