Pork Schnitzel
Crunchy Apple SlawIngredients
- 2 lb boneless pork loin chops
- 2 large eggs, lightly beaten
- ½ cup all-purpose flour
- ¼ cup olive oil
- 1 lemon, cut into wedges
Instructions
- Dip pork in eggs, and dredge in flour, shaking off excess.
- Cook pork, in 2 batches, in 2 Tbsp hot oil per batch 4 to 5 minutes per side or until golden brown. Season lightly with salt and pepper while warm; drizzle lemon juice over pork.
Side Dish Ingredients
- 3 Tbp olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp honey
- 1 (16-oz) pkg tricolor coleslaw
- 2 red apples, thinly sliced (preferably a sweet, crisp variety)
- 2 green onions, thinly sliced
Side Dish Instructions
- Whisk together oil, vinegar, and honey in a bowl. Add coleslaw, apples, and green onions; toss.
