Macadamia-Crusted Mahi Mahi
Mango-Coconut Rice and Snow Peas
Ingredients
- 1 lime
- ¾ cup finely chopped macadamia nuts
- 1 cup panko breadcrumbs (preferably whole wheat)
- 3 Tbsp butter, melted
- 1 Tbsp minced ginger
- 6 (6-oz) mahi mahi fillets
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F; place a rimmed baking sheet in oven while preheating.
- Grate zest and squeeze juice from lime. Stir together nuts and panko in a shallow dish. Stir together butter, lime zest and juice, and ginger in a second shallow dish.
- Sprinkle fish with salt and pepper; dip in butter mixture. Dredge fish in nut mixture, pressing to coat. Carefully place fish on lightly greased preheated baking sheet.
- Bake 8 to 10 minutes or until fish flakes with a fork.

- 2 (8.5-oz) pouches microwavable brown basmati rice
- 1 tsp minced ginger
- ¼ cup unsweetened flaked coconut, toasted
- 1 (6-oz) pkg mango slices, chopped
- 2 (6-oz) pkg microwavable snow peas
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook rice according to package directions; fluff with a fork, and stir in ginger, coconut, and mango.
- Meanwhile, microwave snow peas according to package directions; toss with salt and pepper.
