Pan-Seared Grouper with Lemon-Garlic Spinach

Ingredients

  • 2 (6-oz) grouper fillets
  • 2 tsp olive oil
  • 2 tsp sliced garlic
  • 1 (6-oz) pkg baby spinach
  • ⅛ tsp crushed red pepper
  • 1 tsp fresh lemon juice

Instructions

  1. Sprinkle fish lightly with salt and pepper. Cook in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side; remove from skillet, and keep warm.
  2. Add garlic to skillet; cook 30 seconds or until lightly browned. Add spinach and red pepper; cook 3 to 4 minutes or until spinach is wilted. Stir in lemon juice. Serve spinach mixture with fish.

  • 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • 1 small Roma tomato, finely chopped
  • 1 green onion, chopped
  • ½ Tbsp extra virgin olive oil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook cauliflower according to package directions.
  2. Toss together cauliflower, tomato, green onion, oil, and salt.
