Mushroom-and-Gravy-Smothered Meatballs

Ingredients

  • 3 Tbsp butter
  • 1 (8-oz) pkg whole mushrooms, sliced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 3 cups beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 (26-oz) pkg frozen beef meatballs, thawed

Instructions

  1. Melt butter in a large, deep skillet over medium heat; add mushrooms, onion, and garlic. Cook, stirring often, until tender.
  2. Add flour; cook, stirring constantly, 2 minutes. Gradually stir in broth and Worcestershire sauce. Add meatballs, and cook, stirring occasionally, 15 minutes or until gravy is thickened and meatballs are thoroughly heated.
  3. Serve over Yukon Gold Mashed Potatoes recipe.

Side Dish Ingredients

  • 2 lb Yukon Gold potatoes, peeled and cubed
  • ⅓ cup butter
  • ½ cup milk
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Place potatoes in a large saucepan; add cold water to cover. Bring to a boil over medium-high heat; reduce heat, and simmer 10 minutes or until potatoes are tender.
  2. Drain and return to pot. Add butter and milk. Mash to desired consistency with a potato masher, and season with salt and pepper to taste.
  3. Cook green beans according to package directions; season with salt and pepper to taste.
