Sausage and Sweet Potato Frittata
Balsamic Arugula-Apple SaladIngredients
- 1 (16-oz) pkg ground pork sausage
- 3 cups peeled, chopped sweet potato
- 2 cloves garlic, minced
- 3 Tbsp chopped fresh parsley
- 12 large eggs
- 1 tsp salt
- ½ tsp crushed red pepper
- ½ cup shredded Parmesan cheese
- 2 Roma tomatoes, thinly sliced
Instructions
- Preheat oven to 350°F. Cook sausage, potato, and garlic in a large ovenproof skillet over medium heat, stirring occasionally, until sausage is browned and crumbly and potato is tender. Stir in parsley.
- Whisk together eggs, salt, and red pepper. Add to skillet, and cook 2 minutes. Sprinkle with cheese. Remove from heat, and arrange tomatoes over egg mixture.
- Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.

- 3 Tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 2 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- 1 (5-oz) pkg arugula-spinach mix
- 2 red apples, chopped (preferably a sweet, crisp variety)
Side Dish Instructions
- Whisk together vinegar, mustard, honey, salt, and pepper in a large bowl. Gradually whisk in oil. Add arugula and apples; toss.
