Sausage and Sweet Potato Frittata

Ingredients

  • 1 (16-oz) pkg ground pork sausage
  • 3 cups peeled, chopped sweet potato
  • 2 cloves garlic, minced
  • 3 Tbsp chopped fresh parsley
  • 12 large eggs
  • 1 tsp salt
  • ½ tsp crushed red pepper
  • ½ cup shredded Parmesan cheese
  • 2 Roma tomatoes, thinly sliced

Instructions

  1. Preheat oven to 350°F. Cook sausage, potato, and garlic in a large ovenproof skillet over medium heat, stirring occasionally, until sausage is browned and crumbly and potato is tender. Stir in parsley.
  2. Whisk together eggs, salt, and red pepper. Add to skillet, and cook 2 minutes. Sprinkle with cheese. Remove from heat, and arrange tomatoes over egg mixture.
  3. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.

Side Dish Ingredients

  • 3 Tbsp balsamic vinegar
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • 1 (5-oz) pkg arugula-spinach mix
  • 2 red apples, chopped (preferably a sweet, crisp variety)

Side Dish Instructions

  1. Whisk together vinegar, mustard, honey, salt, and pepper in a large bowl. Gradually whisk in oil. Add arugula and apples; toss.
