Edamame-Bok Choy Salad

Ingredients

  • 1 (12-oz) pkg frozen shelled edamame
  • 2 lb baby bok choy, sliced
  • 2 cups sliced red cabbage
  • 1 (10-oz) pkg matchstick-cut carrots
  • ½ cup chopped fresh cilantro
  • 1 cup sesame-ginger dressing (such as Newman's Own)
  • 1 cup chopped roasted, salted peanuts

Instructions

  1. Cook edamame according to package directions.
  2. Place edamame, bok choy, cabbage, carrots, and cilantro in a large bowl; add dressing, and toss. Sprinkle with nuts.
