Caesar Kale Slaw with Seared Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 head lacinato kale, shredded
  • 1 (10-oz) pkg angel hair coleslaw
  • 1 (10-oz) pkg matchstick-cut carrots
  • ¾ cup freshly shredded Parmesan cheese
  • ½ cup refrigerated light Caesar dressing (such as Marzetti)
  • ½ cup croutons, coarsely crushed

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken, in batches, in hot oil over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
  2. Meanwhile, toss together kale, coleslaw, carrots, and cheese in a large bowl. Add dressing; toss. Divide slaw among 6 plates; top with chicken, and sprinkle with croutons.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, halved
  • 2 Tbsp chopped fresh basil
  • 2 Tbsp honey
  • 1 Tbsp balsamic vinegar

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
