Caesar Kale Slaw with Seared Chicken
Basil-Balsamic StrawberriesIngredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 head lacinato kale, shredded
- 1 (10-oz) pkg angel hair coleslaw
- 1 (10-oz) pkg matchstick-cut carrots
- ¾ cup freshly shredded Parmesan cheese
- ½ cup refrigerated light Caesar dressing (such as Marzetti)
- ½ cup croutons, coarsely crushed
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken, in batches, in hot oil over medium-high heat 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
- Meanwhile, toss together kale, coleslaw, carrots, and cheese in a large bowl. Add dressing; toss. Divide slaw among 6 plates; top with chicken, and sprinkle with croutons.

- 1 (16-oz) pkg strawberries, halved
- 2 Tbsp chopped fresh basil
- 2 Tbsp honey
- 1 Tbsp balsamic vinegar

- Toss together all ingredients in a bowl.
