Chipotle-Ground Turkey Tostadas

Ingredients

  • 1½ lb ground turkey
  • 1 (8-oz) pouch chipotle and garlic taco sauce (such as Frontera)
  • 6 (0.63-oz) tostada shells (such as Guerrero)
  • 1½ cups shredded reduced-fat Mexican-blend cheese
  • 1 lime
  • 6 Tbsp reduced-fat sour cream
  • 2 Tbsp water
  • 1 (8-oz) pkg shredded iceberg lettuce
  • 6 Tbsp fresh salsa

Instructions

  1. Preheat broiler. Cook turkey in a large nonstick skillet 6 to 8 minutes or until turkey is browned and crumbly. Add taco sauce; cook 3 minutes or until thoroughly heated.
  2. Place tostada shells in a single layer on a large baking sheet. Spread turkey mixture on shells; top with cheese. Broil 1 to 2 minutes or until cheese is melted and beginning to brown.
  3. Meanwhile, grate zest and squeeze juice from lime. Combine lime zest, lime juice, sour cream, and water.
  4. Drizzle tostadas with sour cream mixture, and top with lettuce and salsa.

  • 1 (20-oz) jar refrigerated citrus salad, drained
  • 2 avocados, sliced
  • 2 radishes, thinly sliced
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lime juice
  • 1 tsp honey
  • ½ tsp salt
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Arrange citrus sections, avocado, and radishes on a platter.
  2. Whisk together oil, lime juice, honey, and salt; drizzle over salad, and sprinkle with cilantro.
