Pork Chops with Fresh Creole Sauce

Ingredients

  • 2 (6-oz) bone-in pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp Creole seasoning
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ½ (8-oz) pkg chopped onion, bell pepper, and celery mix (or use ½ cup frozen seasoning blend)
  • ½ pint grape tomatoes
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle pork with salt, pepper, and Creole seasoning. Cook pork in hot oil in a large skillet 4 to 5 minutes per side or until done; remove from skillet.
  2. Sauté garlic, onion mix, and tomatoes in skillet 3 minutes or until tender. Return pork to skillet. Sprinkle with parsley.

  • 1 Tbsp apple cider vinegar
  • ¼ tsp salt
  • ¼ tsp lemon-pepper seasoning

Side Dish Instructions

  1. Sauté garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute or until fragrant.
  2. Add spinach, vinegar, salt, and lemon-pepper; cook 3 minutes or until spinach is wilted and liquid is almost evaporated, stirring occasionally.
