Italian Seafood Stew
Fresh Greens with Parmesan
Ingredients
- ½ cup chopped onion
- 1 clove garlic, minced
- 2 tsp olive oil
- ⅓ cup dry white wine (or use chicken broth)
- 1 (1-oz) pkg fresh thyme, divided
- 1 (15-oz) can crushed or diced tomatoes
- 1 cup water
- 1 (4-oz) cod fillet (or other firm white fish)
- ½ lb unpeeled, medium-size raw shrimp, peeled and deveined
Instructions
- Cook onion and garlic in hot oil in a Dutch oven over medium heat 4 minutes. Stir in wine and 1 thyme sprig; cook until liquid almost evaporates.
- Stir in tomatoes and water, and simmer 10 minutes. Stir in fish and shrimp; cook 5 minutes or until fish flakes and shrimp turn pink.
- Discard thyme sprig. Chop 1 tsp thyme, and stir into stew.

- 1 Tbsp fresh lemon juice
- 1 clove garlic, minced
- 1½ Tbsp olive oil
- ½ (5-oz) pkg arugula-baby spinach mix
- ¼ cup shredded Parmesan cheese
Side Dish Instructions
- Whisk together lemon juice, garlic, and salt and pepper to taste in a large bowl; whisk in oil. Add spinach mix and cheese; toss.
