Caprese Pasta with Chicken
Ingredients
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- 1 tsp Montreal steak seasoning
- 1 Tbsp olive oil
- 1 (8.5-oz) pouch ready penne pasta
- ½ pint grape tomatoes, halved (see Note)
- 2 oz sliced fresh mozzarella cheese
- ½ (1-oz) pkg fresh basil, separated into leaves and stemmed
- ½ (8-oz) jar pesto
Instructions
- Sprinkle chicken with seasoning. Cook in hot oil in a cast-iron skillet or grill pan over medium-high heat 4 to 5 minutes per side or until done. Let stand 5 minutes before thinly slicing.
- Cook pasta according to package directions. Divide pasta among plates; top with chicken, tomatoes, cheese, and basil.
- Microwave pesto in a microwave-safe bowl at HIGH 30 seconds or until thoroughly heated; drizzle over chicken and pasta.
