Sausage, White Bean, and Kale Stew
Cheesy Garlic and Herb ToastsIngredients
- ½ lb hot Italian turkey sausage links, casings removed
- 1 Tbsp olive oil
- ½ (8-oz) pkg chopped onion, bell pepper, and celery mix
- 1 (15-oz) can cannellini beans, drained and rinsed
- ½ (16-oz) pkg chopped kale
- 1 (32-oz) carton low-sodium chicken broth
Instructions
- Cook sausage in hot oil in a Dutch oven over medium-high heat 5 minutes or until browned. Remove from pot, and keep warm.
- Add onion mix to pot; cook 3 minutes or until tender. Return sausage to pot; add beans, kale, and broth. Bring to a boil; reduce heat, and simmer 10 minutes.
Side Dish Ingredients
- 2 (1½-oz) slices artisan multigrain bread
- 2 Tbsp garlic-herb spreadable cheese
- 2 Tbsp freshly shredded Parmesan cheese
Side Dish Instructions
- Preheat oven to 450°F. Bake bread on a baking sheet 3 minutes per side or until golden.
- Spread garlic-herb cheese onto one side of each bread slice, and sprinkle with Parmesan. Bake 2 to 3 minutes or until cheese is melted.
